lime and ricotta syrup cake

 

I risked it and made this cake for the first time for Alvin, Brian, My, Stuart, Dave and Oscar…risk paid off!  It was delicious and really, really easy.

Ingredients

  • 200g butter, softened
  • 1 tbsp finely grated lime rind
  • 1 cup caster sugar
  • 3 eggs, separated
  • 250g ricotta cheese
  • 1/2 cup milk
  • 1.5 cups self-raising flour

Lime syrup

  • 1/3 cup lime juice
  • 1/4 cup water
  • 2/3 cup caster sugar

Method

  1. Preheat oven to 160 degrees celsius.  Grease a 20cm baba pan well with butter.
  2. Beat butter, rind and sugar until light and fluffy.  Beat in egg yolks, cheese and milk.  Stir in sifted flour.
  3. In a separate bowl beat the egg whites until soft peaks form; fold into cheese mixture in two batches.
  4. Spread mixture into pan and bake for 30 minutes (silicon pan) or until a skewer comes out clean.  Stand cake in tin for 5 minutes and the turn out onto a wire rack.
  5. Make lime syrup by stirring all the ingredients in a small saucepan over low heat until the sugar dissolves; bring to the boil.  Boil uncovered, 2 minutes or until syrup thickens.
  6. Pour the hot syrup over hot the cake.
