I thought it would be a good idea to develop meals for toddlers that would be tasty for the whole family and also lean towards being just as good the next day with a small amount of tweaking. My main concern was that heating and reheating of food increases risks of food poision if not done correctly, so to prevent food posioning a few simple tips. The danger zone for food is between 5’C and 60’C. Cooling food: cool things quickly within 2 hours and then refirgerate to below 5’C. Heating food: make sure that the core temperature exceed 60’C.
Here is the first of three recipes that have been trialed.
Five star steak mince and veg Risotto2 tbs butter½ dice onion
500 grams of mince 3 cups diluted chicken stock 1 chicken breast finely chopped 2 cups grated vegetables ( zucchini, carrots, peas, pumpkin etc but not potatoes as they can be starchy) 4 tbs grated cheese Method Lightly fry onions and mince in butter Using C 5 star mince has very low fat content without sacrificing flavour. Add rice, cook for two minutes, stirring constantly, reduce heat Add warmed chicken stock one cup at a time, cook for 20 minutes stirring constantly Once all liquid is absorbed rice is tender ( add more stock if it not tender) remove from heat & stir through parmesan before serving

Arancini 1 cup bread crumbs1 cup milk
1 egg Oil enough for frying Method Once risotto has cooled, make in to flat balls ( helps reduce amount of frying oil you need in the pan) In a bowl pore milk and break egg, whisk with a fork Crumb the risotto balls Store in air tight container in the refrigerator until next meal time Fry risotto balls ( Arancini) in hot oil Served with side of salad |
